Dennis’s love of baking started at a young age. His grandmother, Alice, would save the leftover crust just for him so he could make petit jam filled pastries. One of his fondest baking memories is of the 3rd grade when he made fortune cookies for his classmates.
................
Through the years, Dennis held several positions in the food industry from starting out as a bartender, moving on to become a chef de cuisine, and eventually to become a pastry chef. As his passions from his childhood grew, his dream of opening his own bakery grew as well. This dream would last over a ten-year span before applying to the French Pastry School in Chicago, Illinois in 2007.
While attending the French Pastry School, Dennis landed a job with Art Smith (Oprah’s personal chef) at his brand new restaurant, Table 52. Art focused on comfort foods your mother or grandmother would make, but took them to the next level. During his employment, he appeared on The Oprah Winfrey Show in 2007 and even appears on her website. Table 52 was packed every night and Dennis had the opportunity to cook for some very important people including: President Barrack Obama, Robert Redford, Lisa Ling, and Al Roker.
Dennis takes great pride in his many accomplishments from his experience in Chicago including receiving a diploma from L’Art de la Patisserie. It was there that he was able to work alongside Sebastian Cannonen MOF and Jackie Pfeiffer, two highly-esteemed pastry chefs in the world.
Most recently, Dennis has found a beautiful storefront in his hometown of North Wales, PA. He is very excited about meeting great people and being able to give them the utmost quality in food and customer service. Dennis would like to thank his fabulous wife, friends and family who encourage and support him to fulfill his dream in opening his bakery, Alice Bakery and Confectionary.
Rebecca knows the North Wales area like the back of her flour-covered hand. Lansdale has been her hometown since she was a teenager. A North Penn High School graduate, Rebecca attended Penn State University earning a degree in Business Management.
................
After college, she worked in Corporate America for five years as a production planner at a variety of companies. During that time when she became frustrated with work, needed to cheer herself up, or even if it was just someone’s birthday… Rebecca baked.
Then one day a close friend suggested she should consider baking as a profession. At first, she thought her friend was crazy. But as the idea continued to bounce around in her head, she began to give it serious consideration – finally thinking, “Why not?!”
She took a couple introductory classes at the Restaurant School in Philadelphia, quit her corporate job and began working as a pastry assistant at a cafe in Mount Airy, Philadelphia. Through her aunt, Rebecca was next introduced to Jonathan Thomas, owner and executive pastry chef of Blackbird Bakery. Jonathan took Rebecca under his wing and taught her the intricacies of professional cake decorating. She was hooked. She finally found something she loved to do and has been decorating cakes ever since.
Blackbird Bakery unexpectedly closed and she was looking for a cake decorating position closer to home. To her surprise, she was lucky enough to find just such a position at Alice Bakery. She’s been here ever since and doesn’t plan on leaving any time soon. Alice Bakery is exactly what she was looking for – a great place to work that challenges her and makes work fun! She counts herself extremely lucky.
Emily was born and raised in North Wales. She loved baking since she was young but never thought it would become her life. In 2005, Emily graduated from North Penn High School. She worked full-time at a local golf course and a bar for a few years before deciding to take the jump into pastry.
................
Emily graduated with honors from the Art Institute of Philadelphia’s Baking and Pastry program in June 2011. While in school, she interned at Desserts International – a company founded by Master Pastry Chef Gunther Heiland. She also competed for the Art Institute in the “Let Them Eat Cake” competition at the Loew’s hotel. While in school, Emily loved taking Classical Cakes and Bread Production classes. In October 2011, Emily joined the team at Alice Bakery and Confectionary. She hopes to continue to expand her culinary and pastry skills and absolutely loves her new family at Alice.
